1 package of frozen philo dough.
2 packages of feta cheese.
1 package of white farmers cheese.
1 stick of butter.
Place the frozen philo dough in the refrigerator to defrost overnight.
Shred both cheeses in a bowl and mix, cover this plastic wrap and leave in the refrigerator overnight.
Wet a dish towel, and set aside.
Unroll the philo dough, using a paring knife and ruler, slice strips of philo dough (on the short side). Stacke the layers of strips on plastic wrap, lay the plastic covered strips on the wet dish towel and cover with the wet dish towel.
Melt the butter in a measuring cup.
Take 2 to 3 strips of the philo dough, brush with the melted butter. Add a table spoon of the cheese mixture. fold in a triangle as you would a flag. Place on a baking pan and brush the top with melted butter.
Bake at 350 for 20 to 30 minutes until golden brown serve hot, with a cold salad.
Note, working with philo dough takes practice, the first 3 times I made this dish the cheese pies did not look good, however they tasted great.
