Mini Bacon Burgers with Aged Cheddar and Alderbrook Zinfandel BBQ sauce

Mini Bacon Burgers with Aged Cheddar and Alderbrook Zinfandel BBQ sauce

Serves 4

 

8 Small hamburger buns - toasted

2 lbs ground chuck - divided in to 8 patties

1/2 lb dry cured bacon - sliced thin and cooked

kosher salt and pepper

8 slices aged cheddar

 

Method:

Combine cooked bacon, salt and pepper and grill to desired temperature. Add cheese and barbecue sauce

BBQ Sauce recipe:

1 cup ketchup

1/3 cup dark molasses

1/2 cup diced onion

2 tablespoons olive oil

1 cup Zinfandel

3 tablespoons apple cider vinegar

1/3 cup orange juice

4 tablespoons brown sugar

Method:

Saute onions with olive oil for five minutes. Add Zinfandel and reduce by half. Add orange juice, vinegar ,ketchup and molasses. Cook for 20 minutes or until thick.

 

Serve with Alderbrook Zinfandel
